You’re not being paranoid, you’re being appropriately cautious. In our Nov 23, 2010 Career Blog Q&A we discussed the high percentage of employers who are checking candidates’ social network sites. Facebook privacy settings are a tricky business because the folks at Facebook change them so often. Our suggestion, therefore, is to set all your Privacy settings on “Friends Only.” This includes your status, photos, and posts; photos and videos you're tagged in; religious and political views; and so forth. The one exception is Education and Work in the “Connecting on Facebook” section- you may want to give “Everyone” access, or customize it so only certain people can view it.
Or just play it safe and check “Friends Only” for every category.
